Perched on a mountaintop overlooking the extensive jungled hills of the Cahabón region in Guatemala, the co-operative behind this single-origin bar grows and sells cacao, cardamom, cinnamon, and chili peppers. Santa Maria Cahabón was founded in 2004 as a multi-generational effort to responsibly cultivate the land. Intercropping diverse plants throughout the landscape, the families remain committed to sustainable environmental practices while faithfully producing superb cacao.
TASTING NOTES: Orange, toasted almond, and brownie batter.
The origin of the cocoa bean is Guatemala.
