Crystallized Fiji ginger or candied Fiji ginger is both spicy and sweet at the same time and is used as a snack or as an ingredient for baking and confections. Fiji ginger is harvested from young ginger crops (unlike other countries) making it a less stringy and more tender than ginger harvested later.
