MACADAMIA GINGER COOKIES
Ingredients:
• 1 cup all-purpose Flour
• 1/2 teaspoon baking soda
• 1/4 teaspoon ground ginger
• 1/4 teaspoon ground nutmeg
• 1/2 cup unsalted butter, softened
• 1/3 cup sugar
• 1/2 teaspoon baking soda

• 1/3 cup sugar
• 1/3 cup brown sugar, packed
• 1/2 teaspoon vanilla extract
• 1 large egg
• 3/4 cup Fastachi salted macadamia nuts (chopped)
• 1/4 cup Fastachi Fiji crystallized ginger (finely chopped)
• 1/2 teaspoon vanilla extract

• 1/4 cup Fastachi Fiji crystallized ginger (finely chopped)
Preparation:
- Preheat oven to 375F degrees.
- In a medium bowl, whisk together flour, and baking soda.
- In another bowl, cream together sugars and butter.
- Add the egg and vanilla extract to the wet ingredients and mix on medium speed.
- With the mixer on low, add the dry ingredients (1/4 cup at a time) until combined after each addition.
- Mix batter for 1 minute. Fold in the macadamia nuts and Fiji crystalized ginger.
- Scoop the mixture into tablespoon-sized balls and place them on a cookie sheet about an inch and a half apart.
- Bake cookies in the oven for about 10-12 minutes. These cookies should slightly brown around the edges when you take them out.
- Take the cookies off the cookie sheet after about two minutes, and transfer to a wire rack to cool
